Kebabs are a fantastic way to get the kids to eat some vegies. The barbecue or chargrill adds so much flavour. We’ve also seasoned the chicken pieces to make them extra tasty.
Ingredients
600g chicken thigh fillets, chopped into bite-size chunks
2 tbs garlic and herb seasoning
3 bacon rashers, halved crossways, cut into strips lengthways
2 zucchini, sliced
1 punnet red grape tomatoes
1 each of red, green and yellow capsicum, cut into bite-size chunks
1 large red onion, cut into wedges
Cooking spray oil
Method
- Soak 10 wooden skewers in water for 20 minutes (so they won’t burn on the grill). Place the chicken in a bowl. Sprinkle over the seasoning and toss well to combine.
- Preheat a barbecue grill or chargrill over medium heat. Thread each skewer with the chicken pieces, bacon and vegie pieces, as desired, until each skewer has been filled with a range of vegie colours and meats. Spray with oil. Season with black pepper.
- Cook on the grill, turning, for 10-15 mins or until the meat is cooked through and the vegies are tender-crisp and slightly charred. Serve immediately.
Tips and notes
- Experiment with flavours by replacing the garlic and herb seasoning with Moroccan seasoning, or garlic and pepper.
- Swap the chicken for steak and use steak seasoning for flavour.
- Add chunks of fresh or canned pineapple to add a little sweetness.
