This edamame (soybean) pesto is fantastic as a dip, spread or tossed through pasta. Flavours of soybeans, mint, basil, parmesan and lemon juice combine for a pesto you and your family won’t be able to get enough of.
GRAPE BALLS OF GOAT’S CHEESE
These delicious morsels are a wonderfully healthy treat for after school or weekends. These grape balls do contain nuts, which does rule them out of most school lunch boxes.
PERFECTLY POPPED STOVETOP POPCORN
Ideal for a healthy snack or as an extra ‘something’ in the school lunch box, popcorn is tasty, healthy and filling (thanks to the protein in the kernels). It takes mere minutes to pop your own, and you can then add as much or as little butter or salt that you like. So, go on, give it go!
VARENYKY (RUSSIAN DUMPLINGS)
Varenyky (pronounced vah-rEH-nee-key) are stuffed dumplings from the Russian and Ukraine regions. While they can be made with a variety of fillings – similar to a ravioli, for example – my favourite is a filling of beef mince, potato and onion. Please make them and let me know what you think.
