EGG-CELLENT CHOC EASTER CAKE

Here’s one for chocolate lovers – a packet mix chocolate cake, topped with cream, chocolate Easter eggs, frosting, M&Ms and sprinkles. Woo-hoo! Quick and easy. No Easter Bunny required.

Here’s one for chocolate lovers – a packet mix chocolate cake, topped with cream, chocolate Easter eggs, frosting, M&Ms and sprinkles. Woo-hoo! Quick and easy. No Easter Bunny required.

Ingredients

  • 530g pkt White Wings Rich Chocolate Cake mix, or pkt cake mix with frosting, as desired

  • 300ml thickened cream

  • 3 tsp caster sugar

  • 2 tsp vanilla extract

  • 4 hollow Easter Hunting Eggs

  • M&Ms, to decorate

  • Sprinkles, to decorate

Method

  • Make the chocolate cake following packet directions. Allow to cool completely.
  • Meanwhile, use a hand blender to whip the cream, sugar and vanilla in a jug until stiff peaks form. Cover and place in the fridge until needed.
  • Make the frosting following packet directions. Set aside.
  • Use a sharp knife to carefully halve the chocolate eggs (don’t worry if the edges are a little rough).
  • To decorate the cake, reserve 2 tbs of the whipped cream, then spread the top of the cake with the remaining cream. Arrange the egg halves on top, open side up, as desired. Evenly spoon reserved cream among the egg halves.
  • Place 1 tsp frosting on top of the cream in each of the egg halves. Top each with an M&M. Sprinkle the sprinkles all over the cake. Place cake in the fridge until serving.

Tips and notes

  • Instead of M&Ms, place a raspberry on top of the frosting in the egg halves. Also, replace the sprinkles with a dusting of icing sugar mixture.
