The ideal accompaniment to seafood – think cooked prawns, lobster and crab, in particular – this dip is quick to whip up and easy to please.

Ingredients

  • 1 cup whole-egg mayonnaise

  • 1 1/2 tbs fresh dill leaves, chopped

  • 2 large garlic cloves, crushed

  • Zest of 1/2 lemon

  • 1 tbs fresh lemon juice

  • Pinch salt

  • Lemon rind, to garnish (optional)

Method

  • Place all ingredients in a bowl. Use a fork to stir until well combined.
  • Transfer mayo mixture to a small serving bowl. Garnish with lemon rind, if using.

Tips and notes

  • Add 1 tsp chopped capers or gherkins, for a tart extra!
  • Serve with green prawns (tails intact), stir-fried in sweet chilli sauce. Hold the tails to dip into the Garlic and dill mayonnaise.
  • Serve with cold cooked lobster chunks.
