Roasted brussels sprouts with bacon and garlic

Oh my! You’ve never had brussels sprouts like these. Tender, flavoursome and roasted to perfection, these will be a hit at your next dinner or barbie.
Ingredients
1/2 cup vegetable oil, coconut oil or cottonseed oil
500g brussels sprouts, trimmed and halved lengthways
4 pieces shortcut bacon, diced
5 garlic cloves, peeled
1 1/2 tbs balsamic vinegar
Method
- Preheat oven to 200C. Line a baking tray with baking paper. Heat the oil in a large heavy-based pan (I like to use a Le Creuset pan) over medium-high, until shimmering.
- Carefully add the brussels sprouts, bacon and garlic. Season with salt and pepper. Cook, stirring occasionally, for 15 minutes or until brussels and bacon are browned.
- Transfer brussels mixture to the prepared baking tray and spread evenly. Bake for 10-15 minutes, tossing halfway through cooking, until brussels are very browned (not burnt) and tender.
- Transfer mixture to a serving bowl and toss through the balsamic vinegar. Taste and season, if desired. Serve.
Tips and notes
- Remove the bacon and toss through some cooked brown lentils, and chopped fresh mint and flat-leaf parsley, to make this dish vegetarian/vegan.
