When you are looking for the perfect cupcake or cake topper, buttercream icing will do the job nicely. It can be spread on with a palette knife, or piped on in gorgeous swirls with lovely defined edges.
Here is the basic recipe, but you can also add a little food colouring paste to colour as desired.

Ingredients
250g butter, softened
4 cups icing sugar mixture
2 tsp vanilla extract
1-2 tbs milk
Method
- Place the butter in a large mixing bowl. Use a hand mixer to beat until pale and creamy.
- Sift in the icing sugar. Add the vanilla. Beat on low speed until icing sugar is incorporated. Increase the speed to medium-high and beat, scraping down sides with a spatula as needed, until mixture is well combined.
- With beaters on medium speed, add the milk, a little at a time, until icing is the desired consistency.
- Spread or pipe over cake(s).
Tips and notes
- Add food colouring paste in step 2 in a desired colour to tint your buttercream icing. Note that if you using general food colouring liquid, it will make the buttercream more runny, so you may need to add a little more icing sugar mixture to reach the desired consistency.
