A delicious pita-pocket lunch that offers mouth-watering smoky chicken, crunchy greens and silky smooth avocado.

Ingredients

  • 2 wholemeal pita bread pockets

  • 1 tbsp wholegrain mustard

  • 2 thick slices smoked chicken breast

  • 1/2 cup alfalfa sprouts

  • Lettuce leaves, washed and patted dry with paper towel

  • 1/2 avocado, sliced

Method

  • Open the 2 pita bread pockets and spread the insides with the wholegrain mustard.
  • Place a slice of chicken inside each pocket. Top with alfalfa, lettuce and avocado.
  • Serve immediately or place in an airtight container for a school or work lunch.

Tips and notes

  • Instead of smoked chicken breast, try chopped barbecued chicken, or canned salmon or tuna, drained and flaked.
