Fast, fulfilling, fluffy and fabulous… Get these pancakes on the table in a jiffy, so you can get on with the more important things in your day…

Ingredients

  • 1 1/2 cups plain flour

  • 1 tbs baking powder

  • 1 tbs caster sugar

  • 3 eggs

  • 1 cup milk

  • 50g unsalted butter, melted

  • 1 tsp vanilla extract

  • Vegetable oil, for greasing

  • Sliced banana, to serve

  • Blueberries, to serve

  • Icing sugar, to dust (optional)

Method

  • Sift the flour into a large bowl. Stir in the baking powder and sugar. In a jug whisk the eggs, milk, butter and vanilla. Make a well in the centre of the dry ingredients. Pour in the egg mixture and whisk until batter is smooth (do not overmix or pancakes will be gluey).
  • Grease a large non-stick frying pan with a little oil and place over a low-medium heat. Working in batches, pour three 1/4 cupfuls of batter into the pan. Cook for 1-2 mins or until lots of bubbles appear on the surface and underside is golden. Flip over and cook for a further minute or until underside is golden. Transfer to a plate and cover with a clean tea towel to keep warm.
  • Serve pancakes warm with banana and blueberries, and dusted with icing sugar, if desired.

Tips and notes

  • Top pancakes with freshly hulled and sliced strawberries and a drizzle of maple syrup for a sweet alternative.
  • Crispy fried bacon, banana and maple syrup make a more-ish topping for pancakes.
