Guacamole is a must whenever you’re serving Mexican food, from tacos to nachos and burritos. It’s also just fabulous on it’s own. Dip a corn chip into it and pop it in your mouth, then go back for another … and another …

Ingredients

  • 2 large ripe avocados, roughly chopped

  • 2 tbs fresh lime juice

  • 1/2 roma tomato, seeded, finely diced

  • 1/2 small red onion, finely diced

  • 1 red chilli, seeded, finely chopped (optional)

  • 1/4 tsp ground cumin

  • Coriander leaves, to serve (optional)

  • Corn chips, to serve

Method

  • Place the avocado in a bowl with the lime juice. Use a fork to mash until mostly smooth.
  • Add the tomato, onion, chilli (if using), and cumin. Season. Stir to combine.
  • Place in a serving bowl and top with coriander. Serve with corn chips.

Tips and notes

  • You can swap the lime juice for fresh lemon juice, if desired.
