A tasty fresh-filled bagel to pop into your lunch box.

Ingredients

  • 1 tbs oil

  • 4 thick slices halloumi cheese

  • 130g can salmon in springwater, drained

  • 1 tbs dijon mustard

  • 1 tbs whole egg mayonnaise

  • 2 fresh bagels, halved lengthways

  • Alfalfa sprouts, to serve

  • Lettuce leaves, to serve

Method

  • Place the oil in a frying pan or on a chargrill and heat on medium-high. Add the halloumi and cook for 3 minutes on each side or until golden. Remove from pan and set aside.
  • Place the salmon in a small bowl. Add the dijon and mayo. Use a fork to stir until well combined. Season.
  • Place the bases of the bagels on 1-2 serving plates. Top with the lettuce, alfalfa and halloumi. Spoon over the salmon mixture.
  • Cut in half and serve immediately, or place in a lunch box and refrigerate until required.

Tips and notes

  • You can swap the salmon for tuna in springwater or chopped barbecue chicken.
